Nevis, West Indies
We loved our stop at Sunshine’s beach bar in Nevis, West Indies. Loved it so much that we took our kids back the next night. We wanted another Killer Bee, the bar’s secret magic concoction of passion fruit juice, soda, nutmeg and 151 proof rum, and the kids got their own version–”Baby (virgin) Bees”– while enjoying another amazing sunset. Once home, we set out to try and recreate the beverage (yeah, it was That Good). We got pretty close, we think (see recipe at the bottom of this post.)
Puerto Morelos, Mexico
Recently, after a day of snorkeling the fabulous marine park just off-shore, we visited Los Pelicanos. It’s more of a restaurant than a bar, but you can order a drink and some chips and salsa, if that’s all you’re up for. Since we’ve returned, we’ve heard the ceviche there is great too. (Tragic, isn’t it? When you hear of a must-have AFTER you get back?)
We enjoyed a meal of fresh hog fish, even though it was oddly paired with Japanese noodles and a heavy cream sauce. It didn’t matter much—the fish itself was yummy and the sunset view, with palms in the evening breeze, was to die for.
I was curious if other travel bloggers had found some cool beach bars, so I asked some friends…
Koh Tao, Thailand
Dave climbed to the top of a small peak to capture this amazing shot, and earned himself a deep sunburn in the process. He cooled off at a classic Thai beach bar down below…As he says, “No exotic coconut drinks, just a cold beer.”

Utila, Honduras
Audrey and Daniel have the right idea about scuba diving…take it as it comes, appreciate what is, rather than what isn’t. And their relaxed attitude was matched at Babalu’s, an Italian-influenced Honduran beach bar.

Venice, Italy
Angela specializes in reporting from Italia, and when I asked about a “broad interpretation” of a beach bar in Venice, she thought immediately of the famous Hotel Cipriani, with the only Olympic-sized pool in the Veneto and a peekaboo view of the campanile and dome of San Giorgio Maggiore.

She swears the Hawaiian fare she ate was mostly good, even though I thought the photo looked too scary to post here. The World Is Calling’s recipe for Sunshine’s Killer Bee:
Create a 50/50 mixture of 151 proof rum and regular unspiced, light rum
Create a variation of “simple syrup” made with honey instead of sugar by mixing equal parts honey and water—you may choose to do this over heat…
• Add equal parts of the rum blend, passion fruit juice (not a punch or juice blend) and club soda
• Add honey mixture to taste
• Add freshly squeezed lime juice
• Mix well and pour over crushed ice
• To serve, add one or two splashes of Angostura aromatic bitters, shave fresh nutmeg over the top (with microplane or nut grater) and garnish with a slice of lime or star fruit.
